Sella Rice – 1 kg
Cooking Oil – 1 Cup
Green Cardamom – 4 Pods
Cloves – 4 Cloves
Sugar – 1 kg
Khoya – 500 gm
Almonds – 125 gm (Soaked & Peeled)
Dried Coconut – 125 gm
Rasgullay – 500 gm
Directions
- Take 1 kg of sella rice in a large bowl. Fill it with water, mix gently, and then drain the water. Repeat this process 2-3 times or until the water runs clear. Finally, soak the rice in water for 2 hours.
- Boil water in a separate pot. Add the soaked and drained rice to the boiling water. Cover and boil for approximately 20 minutes, then drain the water.
- Heat 1 cup of cooking oil in a pan. Roast 4 pods of green cardamom and 4 cloves to release their aromas. Then add 1/2 kg of sugar and 1/3 of the boiled rice. Mix thoroughly, then add the remaining 2/3 of the boiled rice and another 1/2 kg of sugar. Ensure even mixing. If feasible and to simplify, you may choose to mix the sugar and rice in a single step.
- Uncover the pan and add 500 gm of khoya, 125 gm of pre-soaked and peeled almonds, and 125 gm of sliced dried coconut. Mix well.
- Add red, green, and yellow food color in three different spots, distributing them evenly. Top the dish with 500 gm of rasgullay.
- Cover the pan again and cook on low flame for an additional 10 minutes to meld all the flavors.
