Salt (Namak) – 1 tsp
Carom Seeds (Ajwain) – 1 tsp
Cumin Seeds (Zeera) – 1 tbsp
Cooking Oil – 1/2 Cup
Water (Pani) – As Required
- Filling
Boiled Potatoes (Aloo) – 6 Medium Sized
Cooking Oil – 3 tbsp
Sliced Onion (Pyaz) – 1 Cup
Cumin Seeds (Zeera) – 1 tsp
Diced Green Chilies (Hari Mirch) – 2 Medium Sized
Red Chili Powder (Lal Mirch) – 1 tsp
Salt (Namak) – 1 tsp
Turmeric Powder (Haldi) – 1/2 tsp
Fresh Mint Leaves (Podina) – 1/2 Cup
Fresh Coriander Leaves (Dhaniya) – 1 Cup

Directions
- In a large bowl, combine 4 cups of all-purpose flour, 1 tsp salt, 1 tsp carom seeds, 1 tbsp cumin seeds, and 1/2 cup of oil. Mix well until the mixture crumbles. Gradually add water as needed and knead the mixture into a firm dough. Let the dough rest for 30 minutes.
- Boil 6 medium-sized potatoes until tender. Peel and mash them.
- In a pan, heat 3 tbsp of oil. Add 1 cup of chopped onions and sauté for 2-3 minutes until they turn soft. Then add 1 tsp of cumin seeds and 2 medium-sized diced green chilies. Mix well.
- Add the mashed potatoes to the pan along with 1 tsp of red chili powder, 1 tsp of salt, and 1/2 tsp of turmeric powder. Mix everything together and cook for an additional 2-3 minutes. Remove from heat and let the filling cool before using.
- Once the potato mixture has cooled, add 1/2 cup of fresh mint leaves and 1 cup of fresh coriander leaves to it. Mix well to incorporate the herbs into the filling mixture, then set it aside.

- Take one semi-circle and fold it into a cone shape, overlapping the edges slightly. Seal the edge of the cone with a little water, pressing firmly to ensure it stays closed. Hold the cone upright and fill it with the prepared filling mixture. Once filled, wet the inner rim of the cone’s open edge with a little water. Press the edges firmly together to seal the samosa. Repeat this process for all the remaining wrappers.
