Instructions
- In a pan, heat oil and add star anise, cloves, black cardamom, bay leaves, whole black pepper, cumin seeds, whole coriander seeds, and cinnamon. Fry the spices until they release their aroma.
- Add onions and fry until they turn golden brown.
- Once the onions are brown, set aside a portion for garnishing at the end.
- Add water to the pan and mix well. Let it cook for 2 minutes.
- Add chicken and ginger garlic paste to the pan and fry until the chicken turns white.
- Now, add chili flakes, garam masala, turmeric powder, tomatoes, and green chilies (center cut but not halved). Mix everything well.
- Cover the pan and cook on low flame for 10-12 minutes or until the tomatoes turn soft.
- Uncover the pan, mix the contents, and add yogurt, biryani masala, and tamarind paste along with its soaked water (soak tamarind for at least 10 minutes).
- Add coriander and mint leaves (if using dried mint leaves, use 2 tbsp; for fresh mint leaves, use 3 tbsp). Mix everything and cook until the oil separates from the masala and rises to the top. The chicken qorma (gravy) is now ready. Set it aside for layering.
- In another pan, take oil and add cloves, star anise, bay leaves, salt, and black cardamom. Let it boil.
- Once boiled, add rice (washed and pre-soaked as per rice packaging instructions, usually for a minimum of 20 minutes for good quality basmati rice). Mix well and let it boil. Once it starts boiling, partially cover the pan and cook on low flame for 10-15 minutes or until the rice is 3/4 done. Do not fully cook the rice.

- Layer the rice, we reserved earlier, on top of the chicken qorma. Place lemon slices on top of the rice and sprinkle the reserved fried onions.
- In a small bowl, mix 1 tbsp of yellow (zarda) color with 1/4 cup of water. Pour it in four corners of the pot. Then sprinkle dried mint leaves (2 tbsp for dried, 3 tbsp for fresh mint) over the rice.
- Cover the pot and cook on low flame for 10-12 minutes.
- Uncover the pot and carefully mix the rice and chicken layers together.
