Sliced Onion – 2 Cups
Star Anise – 3 Pods
Cinnamon – 3 Inch Stick
Cloves – 2 Cloves
Cumin Seeds – 1 tbsp
Black Cardamom – 1 Pod
Whole Black Pepper – 1tsp
Salt – 1 tbsp
Bay Leaves – 2 Medium Sized
Ginger Garlic Paste – 2 tbsp
Water – 1 Litre
Cooking Oil – 1/2 Cup
Sliced Tomatoes – 2 Cups
Sliced Green Chilies – 4 Medium Sized
Chili Flakes – 1 tsp
Biryani Masala – 50 gm
Yogurt – 1 Cup
- Rice Boiling
Water – As Required
Salt – 2 tbsp
Soaked Rice – 4 Cups
- Layering
Mint Leaves – 3 tbsp
Yellow Food Color
Directions
- In a pressure cooker, combine mutton/beef, sliced onion, spices (star anise, cinnamon, cloves, cumin seeds, black cardamom, whole black pepper), salt, bay leaves, ginger garlic paste, and water.
- Cook under pressure for 20 minutes until the meat is fully cooked.
- After cooking, add cooking oil, sliced tomatoes, chili flakes, biryani masala, and yogurt to the gravy. Cook until tomatoes are soft and oil separates from the gravy.
- In a separate pot, boil water with salt. Add pre-soaked rice and cook until 80% done. Drain the water from the rice.
- In a pan, layer half of the rice, followed by the prepared meat mixture, and then the remaining rice. Sprinkle mint leaves and add yellow food color on one side. Cover and cook for 15 minutes on low flame until flavors blend and rice is fully cooked.
