Whole Coriander Seeds (Sabut Dhaniya) – 1 tbsp
Star Anise (Badian Khatai) – 3 Pods
Whole Black Pepper (Kali Mirch) – 1 tsp
Black Cardamom (Bari Ilaichi) – 1 Pod
Cloves (Laung) – 3 Cloves
Cumin Seeds (Zeera) – 1 tbsp
Bay Leaves (Tez Pat) – 2 Large Sized
Ginger Garlic Paste (Lehsan Adrak) – 2 tbsp
Diced Tomatoes (Tamatar) – 1 Cup
Diced Green Chilies (Hari Mirch) – 4 Medium Sized
Gram Masala – 1 tsp
Chili Flakes (Dara Mirch) – 1 tbsp
Turmeric Powder (Haldi) – 1 tsp
Red Chili Powder (Lal Mirch) – 1 tbsp
Frozen/Fresh Peas (Matar) – 2 Cups
Fresh Mint Leaves (Podina) – 1/3 Cup
Water (Pani) – 1.5 Cups (For Cooking Peas)
Water (Pani) – 8 Cups (For Cooking Rice)
Salt (Namak) – 3 tbsp
Soaked Rice (Chawal) – 4 Cups
Directions
- Heat 1 cup of cooking oil in a pan. Add 1 cup of sliced onions and fry until they turn light brown. Then, add 1 tablespoon of whole coriander seeds, 3 pods of star anise, 1 teaspoon of whole black pepper, 1 black cardamom pod, 3 cloves, 1 tablespoon of cumin seeds, and 2 large bay leaves. Fry for 1-2 minutes.
- Next, add 2 tablespoons of ginger-garlic paste, 1 cup of diced tomatoes, 4 medium-sized diced green chilies, 1 teaspoon of garam masala, 1 tablespoon of chili flakes, 1 teaspoon of turmeric powder, 1 tablespoon of red chili powder, 2 cups of frozen or fresh peas, and 1/3 cup of fresh mint leaves. Mix well and cook for 2-3 minutes. Then, add 1.5 cups of water, cover, and cook on low flame for 10-15 minutes or until the peas are fully cooked.
- In a separate pot, bring 8 cups of water to a boil. Add 3 tablespoons of salt or adjust according to taste. Once boiling, add 4 cups of soaked rice (the soaking time should be as per the instructions mentioned on the rice packaging). Cook on medium to low flame until the rice is 80% done.
- Finally, cover the pot and cook on low flame for another 15 minutes. Once done, serve and enjoy your delicious Peas Pulao!
