Red Cjili Powder (Lal Mirch) – 1 tbsp
Chili Flakes (Dara Mirch) – 1 tsp
Cumin Powder (Zeera Powder) – 1 tsp
Coriander Powder (Dhaniya Powder) – 1 tsp
Garam Masala – 1 tsp
Turmeric Powder (Haldi Powder) – 1 tsp
Salt (Namak) – 1 tbsp
Ginger Garlic Paste (Lehsan Adrak Paste) – 1 tbsp
- Qorma
Cooking Oil – 1 Cup
Sliced Onion (Payaz) – 5 Medium Sized
Ginger Garlic Paste (Lehsan Adrak Paste) – 1 tbsp
Diced Tomatoes (Tamatar) – 5 Medium Sized
Biryani Masala – 50 gm
Dried Plums (Aloo Bukhara) – 9 Pcs
Green Chilies (Hari Mirch, halved from the center) – 4 large Sized
Yogurt (Dahi) – 1 Cup
- Boiling Rice
Water (Pani) – As Required
Salt (Namak) – 4 tbsp
Star Anise (Badian Khatai) – 2 Pods
Cloves (Laung) – 3 Pods
Black Cardamom (Bari Ilaichi) – 2 Pods
Cinnamon (Dar Cheeni) – 2 Inch Stick
Bay Leaves (Tez Pat) – 2 Large Sized
Soaked Rice – 6 Cups
- Layering
Fresh Mint Leaves – 3 tbsp
Yellow Food Color
- Smoking
Coal – 1 Piece
Cooking Oil – 1 tbsp
Directions
- In a large bowl, combine 1 kg of Chicken (Murghi) with 1 tbsp Red Chili Powder (Lal Mirch), 1 tsp Chili Flakes (Dara Mirch), 1 tsp Cumin Powder (Zeera Powder), 1 tsp Coriander Powder (Dhaniya Powder), 1 tsp Garam Masala, 1 tsp Turmeric Powder (Haldi Powder), 1 tbsp Salt (Namak), and 1 tbsp Ginger Garlic Paste (Lehsan Adrak Paste). Mix well and let it marinate for 30 minutes.
- In a pan, heat 1 cup of oil. Add 5 medium-sized sliced onions and fry until golden brown. Once browned, add 1 tbsp ginger garlic paste and the marinated chicken. Fry until the chicken turns white.
- Add 5 medium-sized diced tomatoes, 50 gm Biryani Masala, 9 pcs Dried Plums (Aloo Bukhara), 4 large-sized Green Chilies (Hari Mirch, halved from the center), and 1 cup Yogurt (Dahi). Cook until the oil separates from the gravy. Your qorma is now ready.
- In another pan, take enough water. Add 4 tbsp Salt (Namak), 2 Pods of Star Anise (Badian Khatai), 3 Pods of Cloves (Laung), 2 Pods of Black Cardamom (Bari Ilaichi), 2-inch stick of Cinnamon (Dar Cheeni), and 2 large-sized Bay Leaves (Tez Pat). Let it boil.
- Once boiling, add 6 cups of soaked rice and cook until the rice is 80% done ( Soaking time should be as per the instructions mentioned on the rice packaging). Drain the water.
- Now, start layering. In a pan, put half of the partially boiled rice, then lay the qorma prepared on top, and finally, lay the rest of the rice on top.
- Sprinkle 3 tbsp of fresh coriander leaves over the rice. On one side, pour yellow food color. Cover and cook on low flame for 15 minutes.
- Then, uncover and place a burning coal in a small metal bowl or on aluminum foil. Pour 1 tbsp of cooking oil on it and immediately cover. Let it rest for 5-10 minutes. Mix well and enjoy your Chicken Tikka Biryani!
