Sifted Besan – 2.5 Cups
Turmeric Powder – 1/2 tsp
Red Chili powder – 1 tsp
Gram Masala – 1/2 tsp
Green Chilies – 2 Large Sized
Salt – 1 tsp
Chopped Onions – 2 tbsp
Qasoori Methi – 1 tbsp
Lemon Juice – 1 tbsp
Yogurt – 1/2 Cup
Water – As Required (Roughly 500 ml)
- For Gravy
Cooking Oil – 1 Cup
Cumin Seeds – 1 tsp
Onion Paste – 1 Cup
Ginger Garlic Paste – 1 tbsp
Garam Masala – 1/2 tsp
Cumin Powder – 1 tsp
Red Chili Powder – 1 tsp
Coriander Powder – 1 tsp
Salt – 1 tbsp
Turmeric Powder – 1/2 tsp
Qasoori Methi – 1 tsp
Tomato Paste – 1/2 Cup
Yogurt – 2/3 Cup
Water – As Required (Roughly 500 ml)
Coriander Leaves – 2 tbsp
Directions
- In a pan, combine Sifted Besan, Turmeric Powder, Red Chili powder, Garam Masala, Green Chilies, Salt, Chopped Onions, Qasoori Methi, Lemon Juice, Yogurt, and Water. Mix until you achieve a lump-free mixture of reasonable consistency. Adjust water to reach a balanced consistency.
- Turn on the flame and cook the mixture while continuously stirring until it thickens and all the water has evaporated. Turn off the flame and remove it from the stove.
- Immediately transfer the mixture to a wide flat utensil and spread it. Allow it to cool down and solidify. Once cooled, cut it into desired shapes with a knife and set it aside.
- In a pan, heat 1 cup of oil over medium flame. Add Cumin Seeds and fry for 1 minute. Then add Onion Paste and fry until it changes color. Add Ginger Garlic Paste, Garam Masala, Cumin Powder, Red Chili Powder, Coriander Powder, Salt, Turmeric Powder, Qasoori Methi, and Tomato Paste. Mix well, cover, and cook for 3-5 minutes.
- Uncover the pan, add Yogurt, and cook until the oil separates from the gravy.
- Add 500 ml of water or as per requirement to achieve the desired stew consistency and bring it to a boil.
- Carefully add the prepared Khandwiyan (besan nuggets) into the gravy, mixing lightly and gently to avoid breaking them. Sprinkle Coriander Leaves, bring it to 1-2 boils, and your Khandwiyon Ka Salan is ready to be enjoyed!
