Diced Tomatoes -1 Cup
Ginger Garlic Paste – 2 tbsp
Diced Green Chilies – 3 Medium Sized
Turmeric Powder – 1/2 tsp
Coriander Powder – 1 tbsp
Chili Flakes – 1 tsp
Garam Masala – 1 tsp
Red Chili Powder – 1 tsp
Salt – 1 tbsp
Moong Dal – 2 Cups
Water – 1 Cup
Dried Fenugreek Leaves – 2 tbsp
Fresh Coriander Leaves – 1/2 Cup
Directions
- In a pan, heat 1/2 cup of cooking oil. Add 1 tablespoon of cumin seeds, 3 cloves, 2 pods of black cardamom, 1 teaspoon of whole black pepper, and 2 medium-sized bay leaves. Fry the spices for 2 minutes until fragrant. Then, add 1 cup of chopped onions and fry until they turn light brown.
- Next, add 1 cup of diced tomatoes, 2 tablespoons of ginger-garlic paste, 3 medium-sized diced green chilies, 1/2 teaspoon of turmeric powder, 1 tablespoon of coriander powder, 1 teaspoon of chili flakes, 1 teaspoon of garam masala, 1 teaspoon of red chili powder, and 1 tablespoon of salt. Mix well to combine the ingredients. Then, add 2 cups of moong dal (pre-soaked for at least 1 hr) and 1 cup of water. Cover the pan and let it cook for about 20 minutes or until the lentils are fully cooked.
