Directions
- Take 2 Quarter Chicken Pieces (Approximately 750 gm) and make multiple reasonably deep cuts on each piece.
- In a large bowl, add enough water to cover the chicken pieces. Mix in 4 tbsp of Vinegar, 1 tbsp of Salt, and 1/2 tbsp of Baking Powder. Submerge the chicken pieces in the mixture and let them rest for 30 minutes. After 30 minutes, remove the chicken from the mixture, rinse with cold tap water, and pat dry.
- In another bowl, combine 1 tbsp of Ginger Garlic Paste, 1 tsp of Salt, 1 tsp of Chili Flakes, 1 tsp of Red Chili Powder, 1 tbsp of Crushed Cumin Seeds, 1 tbsp of Chicken Powder, 1 tsp of Baking Powder, 2 tbsp of Chili Sauce, 2 tbsp of Soy Sauce, 2 tbsp of Vinegar, and 1 tsp of Black Pepper Powder. Add the washed chicken to the marinade, ensuring it’s thoroughly coated. Allow it to marinate for at least 1-2 hours, preferably overnight.
- In a tray or wide bowl, mix 2 cups of All-Purpose Flour, 1 tsp of Salt, and 1 tsp of Chicken Powder to form the coating mixture.
- Take each marinated chicken piece and coat it evenly with the flour mixture, then dip it in cold water, and finally, coat it again in flour.
- Heat oil in a pressure cooker. Once hot, carefully add the coated chicken pieces. Fry for approximately 3 – 4 minutes on medium flame, then flip the pieces to ensure even cooking.
- Cover the pressure cooker without the whistle and cook for 7-8 minutes. This will ensure the chicken cooks through while maintaining its crispiness.
- Uncover the pressure cooker, flip the sides and continue cooking for another 3 minutes to ensure the chicken is cooked to perfection. Once done, remove the chicken from the pressure cooker and serve hot. Enjoy the crispy goodness of your homemade Chicken Broast in Pressure Cooker from The Spicy Trail!
