Directions
- In a mixing bowl, combine 1 tablespoon of Ginger Garlic Paste, 2 tablespoons of Coriander Paste, 1 tablespoon of Green Chili Paste, 1 tablespoon of Lemon Juice, 1 teaspoon of Black Pepper Powder, 1/2 teaspoon of White Pepper Powder, 1 teaspoon of Salt, 1 teaspoon of Garam Masala, 3 tablespoons of Cream, and 200 grams of Chicken Boneless Thigh. Allow the mixture to marinate for at least 30 minutes.
- Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the marinated chicken to the pan and cook until the chicken is fully cooked and all the water has evaporated.
- Once the chicken is cooked, add 1 cup of chopped onions and 1/3 cup of chopped jalapenos to the pan. Mix well and turn off the flame. Create a space in the center of the mixture and place a burning coal wrapped in aluminum foil or a small bowl. Drizzle 1 tablespoon of cooking oil over the burning coal and immediately cover the pan. Let it rest for 10 minutes to infuse the smoky flavor into the stuffing.
- In a separate bowl, mix 1/2 cup of all-purpose flour with 125 ml of water to form a lump-free slurry.
- Take a samosa wrapping sheet and spread it on the table. Fold one edge diagonally. Wrap the longer unfolded side around to create a pocket. Fill the pocket with an appropriate amount of the prepared chicken filling. Moisten the edges of the with the prepared flour slurry and fold the remaining unfolded length to seal the samosa.
- Heat oil in a deep frying pan over medium-high heat. Fry the prepared samosas until they turn golden brown and crispy.

- Refrigerating: Store the cooked samosas in an airtight container in the refrigerator for up to 3-4 days. Ensure they are cooled completely before storing to prevent sogginess.
- Freezing (Cooked Version): Place the cooked samosas in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer bag or container. They can be stored in the freezer for up to 1-2 months.
- Freezing (Uncooked Version): This is the preferable way. If you have leftover uncooked samosas, arrange them in a single layer on a baking sheet and freeze until solid. Then, transfer them to a freezer bag or container. They can be stored in the freezer for up to 3 months.
Useful Tips
Here are some useful tips for a perfect chicken malai boti samosa recipe:
- Ensure the samosa wrappers are sealed tightly to prevent the filling from leaking during frying.
- Fry the samosas in batches to avoid overcrowding the pan, which can result in uneven cooking.
- For a healthier alternative, you can also bake the samosas in the oven instead of frying them.
- Experiment with different fillings and spices to customize the flavor of your samosas.
